Keeping the can open in the fridge is a bad idea: Here's why

In the supermarket, more and more food is stored in tin cans. This type of container is very popular because it allows their long-term storage without damage. In general, most are installed in the pantry and can stay there for a very long time. First, these cans should always be carefully inspected at the time of purchase. If you find that they are dented or rusty, do not take them. This condition causes a loss of tightness of the box and when opened it favors the entry of various microorganisms and bacteria that would contaminate the interior. Similarly, if your boxes, stored in a closet for a long time, show this type of rust, it is better not to consume them. This phenomenon explains exactly why you should not have a can open in the refrigerator. In fact, it is caused by contact of metal cans, food and oxygen, which can cause rust stains. As a safety precaution, it is also strongly recommended that when you open the box and do not intend to consume its entire contents, move the leftover food to another airtight container, plastic or glass.

Note that the cans are generally protected from rust on the outside due to a very thin layer of tin. Inside, they also have a layer of tin or fired enamel or even both. The container does not oxidize easily and no substances flow out of the food box. For the most part, it must not only be airtight, but must also be stored out of light. Therefore, they are packed in cans and not in glasses. Of course, if the box itself looks flawless when you buy it, then it will all come at home. If these containers are not stored properly in suitable places, away from heat or humidity, they will not have a problem with oxidation. If this is not the case, then you will have to expect unpleasant surprises.

The expiration date is stated on the can packaging. But sometimes it can last much longer, especially if the weather or rust is not visible. The cans are designed precisely so that perishable food of animal or plant origin can be stored for longer. For this purpose, these containers are hermetically sealed and treated exclusively with steam.

When it comes to perishable foods stored for a limited time, we are talking about semi-canned foods, which must always be stored in the refrigerator. This is the case, for example, with canned anchovies. If consumption is delayed, the anchovy pulp can decompose quickly.

As for the liquid brought into these boxes, it helps above all to better preserve their contents. It is usually a mixture of oil or water and salt to protect cans from external influences. This will avoid adding any type of artificial preservative. Therefore, it is not necessary to throw this liquid away: you can enjoy it perfectly and incorporate it into the preparation of your meal.

In addition, it is advisable to always wash the top of the box before opening it and also to use clean dishes to remove the food inside. Remember that foods are perishable when opened. So it must be consumed quickly!
